In the heart of the pristine and wild region of Maremma Toscana, not far from the sea, the clayey soil rich in skeleton creates the ideal habitat for producing an olive oil with a golden-yellow color, a unique slightly spicy aroma, and low acidity.
The cultivars present in the estate comply with the criteria required by the Consortium for the protection of Tuscan IGP Extra Virgin Olive Oil and are as follows: Frantoio, Leccino, Maurino, Moraiolo, and Pendolino.
Throughout the year, each olive tree is continuously monitored: this procedure is essential for the successful production of excellent oil.
In October, the olives are harvested when the color of the fruits changes from green to purple and the inside of the olive contains a higher quantity of oil and phenolic substances that will affect the organoleptic and nutritional qualities of the finished product. On the same day of the harvest, they are taken to the mill in order to maintain the qualitative characteristics of the fruits unaltered. The milling is strictly carried out cold, the oil is allowed to settle, at controlled temperatures, in special stainless steel containers to purify naturally without the use of machinery.
