- Winemaking: FERMENTATION: Alcoholic fermentation in contact with the skins at a temperature between 24 and 28°C in stainless steel tanks. Malolactic fermentation is fully completed. AGING: Approximately 3-4 months in stainless steel tanks, followed by about 18 months in large French oak barrels for part of the batch. The remaining portion is aged for about 18 months solely in stainless steel. This is followed by bottle aging for at least 4-5 months.
