Across vineyards, olive groves and cellars: the quiet month that prepares the new vintage

February is one of the least visibly active months of the year in the agricultural world, yet it is also one of the most important. Across the regions where Ufarmer’s producers work — from the Tuscan hills to the slopes of Mount Etna, from the volcanic soils of the Colli Euganei to the windswept vineyards of Friuli — nature may still appear to be at rest. In reality, everything is already in motion.

It is the month of preparation, balance, and the decisions that will shape the entire growing season.

In the vineyards, pruning is in full swing. It is patient work, carried out vine by vine, shaping the future crop and the balance of spring growth. Vineyard rows are maintained, soils are monitored, and drainage and microclimates are carefully assessed. In many regions, work also continues on terraces, dry-stone walls, and ground cover: often unseen details, yet essential to the health of the vineyard.

In the olive groves, the trees are dormant but carefully monitored. The effects of wind and winter moisture are assessed, while pruning is planned for late winter and early spring. Meanwhile, at the olive mills, the new oils continue their natural settling process: they stabilise, clarify, and gradually find their balance.

In the cellar, February is a month of careful observation. Wines undergoing ageing evolve slowly: aromas and structure become more integrated, the texture on the palate takes shape, and the wine gradually develops its final harmony. It is not a time for major interventions, but rather for monitoring, tasting, and patience.

Each region experiences this time of year differently. On Mount Etna, snow may still cover the highest vineyards, while in Puglia the sunlight is already bright and dry. In Franciacorta, the cold supports the ageing of sparkling wines, while in the Langhe, crisp, clear air accompanies the slow evolution of the reds. In Tuscany and Umbria, the soils regenerate and prepare for the return of vegetative growth.

February is the month when the foundations of the new growing season are laid, even though little seems to be happening.

It is a time of quiet, behind-the-scenes work.
What cannot be seen now… will later be tasted in the glass.
