- Perfumes and scents: On the nose, it presents floral notes of magnolia and orange blossom, fruity hints of peach and yellow fruit, citrus, and aromatic herbs. The softness and richness of flavors on the palate are well-balanced by an acidic vein and a savory finish, making the finale complex and pleasant. Elegant and very persistent, versatile in pairings.
- Pairings: Ideal with vegetable tempura, pumpkin-based soups, legumes and mushrooms, risottos, and first courses with peas, asparagus, and wild herbs in general. Also pairs well with white meats and fresh cheeses.
- Winemaking: Cold maceration on the skins, depending on the origin of the grapes, ranging from a few hours to 3 days. Simple pressing and static settling. Fermentation initiated with indigenous yeasts, the mass refines in steel for 18 months.
