Our Metodo Classico is made from Chardonnay grapes grown in the vineyards of Faver – Altavalle, at 600 meters above sea level, on gravelly soil of porphyritic origin. The vines, trained in the traditional Trentino pergola style since 1990, express the full energy of a unique soil and the labor renewed with every harvest.

“Gradar” is a dialect term from the Val di Cembra. It refers to the hard work of sifting porphyry stones from cultivated fields—an ancient and exhausting task repeated for generations. Those very stones, patiently recovered, have become the building blocks of the dry stone walls that today shape over 700 kilometers of terraced vineyards, supported solely by human will.

This sparkling wine is a tribute to that landscape carved by effort and dedication, to the heroic viticulture that has endured, innovated, and transformed into excellence. It is the authentic expression of a valley where the passion for the vine is not taught: it is inherited.

  • Perfumes and scents: Visually, it shows a bright straw-yellow color with a fine and persistent perlage. On the nose, it expresses elegant notes of chamomile, white peach, citrus zest, aromatic herbs, and a delicate mineral hint, almost chalky. On the palate, it is taut and vertical, yet well balanced, with a fresh and savory texture that provides length and great drinkability. Persistent, elegant, and profound.
  • Pairings: The Gradar by F.lli Paolazzi, a sparkling wine made using the traditional method, pairs perfectly with a variety of dishes—especially seafood and lean fish, appetizers and snacks, and even white meats. It is also ideal as an aperitif, particularly in more “chic” settings.
  • Winemaking: The gentle pressing of the grapes allows the extraction of the free-run juice, which is then clarified through static settling and fermented at a controlled temperature (14–16 °C). The maturation in stainless steel lasts about 9 months, after which the wine undergoes secondary fermentation (prise de mousse) in June following the harvest. This is followed by an extended aging on the lees of at least 40 months, before riddling, disgorging, and an additional bottle aging period of 3–6 months.
