Passopisciaro Passobianco 2024 is a white wine made from Chardonnay, boasting a rich and elegant bouquet with alternating notes of tropical fruit and apricot, toasted cereals, and honey.

Unlike most white wines from Etna, which are typically produced using the indigenous Carricante grape, Passobianco is made exclusively with Chardonnay.

Perfumes and scents: Notes of tropical fruit and apricot blend with nuances of toasted cereals, honey, and white rose. Medium intensity and structure on the palate, with great elegance, softness, richness, and beautiful minerality.
Pairings: Cheeses, seafood dishes, and crustaceans
Winemaking: 30% of the grapes were cold macerated to enhance the aromatic profile, while the remaining grapes were whole-cluster pressed to emphasize freshness and minerality. Alcoholic fermentation took place in stainless steel tanks at temperatures of 22-24 degrees Celsius. Malolactic fermentation occurred in concrete tanks, and controlled temperatures allowed this phase to proceed quickly, resulting in clean and stable wines as soon as possible. Aging on fine lees occurred partially in concrete tanks and partially in large oak barrels. No batonnage was performed to preserve the freshness that characterizes Passobianco.
Details / Anecdotes: Passobianco 2024 is a very balanced and enjoyable wine. Acidity, aromaticity, and body naturally come together in the glass, and along with the mineral sensations that are the signature of the Etna region, this white wine is one where each sip beckons another!
