Pairings: European dishes: mushroom soups, fermented cheeses, roasted meats, and game. International dishes: chicken tikka masala, Singapore rice noodles, and sweet and sour dishes.
Winemaking: Harvest: manual collection in crates. Vinification: maceration on the skins with alternating pump-overs and délestages. Aging: in wooden barrels for 24 months.
