Italian oil production: discover the phases

The production of olive oil takes place mainly in a mill where ancient stone millstones today have been replaced by modern machinery, capable of producing a greater quantity of olive oil in less time, maintaining the same quality.

The production of Italian olive oil takes place in several phases:

  • the harvesting of olives by hand and mechanical means, which must be carried out in the correct period in order to reach the right ripeness;
  • the weighing of the olives, once collected, are transported to the mill where they are checked and recorded;
  • defoliation and washing in the crusher, to remove impurities, mud and branches;
  • the pressing, through mechanical discs the olives are crushed to obtain a thick and creamy paste, with a pungent smell;
  • Kneading, in which the dough is gently mixed by mechanical arms, at the temperature of 27-28 installments. During this process oil drops are created;
  • pressing, hot or cold, in which the three components that form the dough obtained during the kneading are separated;
  • storage, in which oil is poured into special containers that protect it from light and heat sources.
