Pairings: Perfect as an aperitif and excellent with fish dishes and meats, including red meats. Ideal with sushi.
Winemaking: Harvest: hand-picked around mid-August Vinification: gentle pressing, brief maceration on the skins to extract color. First fermentation in temperature-controlled stainless-steel tanks. Secondary fermentation in autoclave (long Charmat method), followed by filtration and bottling.
