Adopt your Barrel of
GRADAR Trento DOC – Delivery in 2027
Our Traditional Method sparkling wine is made exclusively from Chardonnay grapes grown in the vineyards of Faver, in the Altavalle area, at an altitude of 600 metres. Rooted in gravelly soils of porphyry origin and trained using the traditional Trentino pergola system since 1990, the vines express the distinctive energy of this remarkable terroir and the dedication that accompanies every harvest.
“Gradar” is a dialect word from the Cembra Valley. It refers to the demanding task of removing porphyry stones from cultivated fields—an ancient, laborious practice repeated by generations of winegrowers. Those very stones, patiently gathered over time, were later used to build the dry-stone walls that today support more than 700 kilometres of terraced vineyards, held together solely by human skill, perseverance, and determination.
This sparkling wine is a tribute to a landscape shaped by hard work and dedication, and to the heroic viticulture that has endured, evolved, and flourished into excellence. It is the authentic expression of a valley where the passion for the vine is not taught—it is inherited.

Characteristics
- Typology: Sparkling wine
- Grape variety: Chardonnay 100%
- Body: Medium
- Alcohol content: 12,50%
- Perfumes and scents: Brilliant straw yellow in colour, with a fine and persistent perlage. The bouquet reveals elegant aromas of chamomile, white peach, citrus zest, aromatic herbs, and a delicate mineral nuance with subtle chalky notes. On the palate, it is precise and vibrant, combining freshness with remarkable balance. Its lively acidity and savoury minerality lead to a long, refined finish, giving the wine exceptional drinkability. Persistent, elegant, and deeply expressive.
- Pairings: **Gradar** by F.lli Paolazzi pairs beautifully with a wide range of dishes, particularly seafood, delicate white fish, appetizers, and light bites. It also complements white meats with elegance and makes an excellent aperitif, especially for refined and celebratory occasions.
- Winemaking: Gentle pressing allows only the free-run juice to be extracted. The must is then clarified by static settling before undergoing temperature-controlled fermentation at **14–16°C (57–61°F)**. The base wine matures in stainless steel tanks for approximately nine months, after which the secondary fermentation in bottle begins in June following the harvest. This is followed by an extended lees ageing of at least **40 months**, before disgorgement and a further **3–6 months** of bottle ageing, allowing the wine to achieve greater complexity, finesse, and harmony.
- Details / Anecdotes: This sparkling wine is a tribute to a landscape shaped by hard work and unwavering dedication, and to the heroic viticulture that has endured, evolved, and ultimately become a symbol of excellence. It is the authentic expression of a valley where a passion for the vine is not something that can be taught—it is passed down from one generation to the next.
